History

A little background

La Choricera Central Market — history

he “La Choricera” Central Market is housed in the former sausage-making factory of the same name, an iconic industrial building in Segovia designed by architect Curro de Inza, completed between 1963 and 1966, and recognized for its architectural significance. The factory ceased its meat-processing operations in 2009 and, after years of disuse, reopened its doors in 2024 as an eco-market and cultural center, spearheaded by the Circular Ecology Association, combining a market for organic and locally sourced products with spaces for music, education, and cultural activities.

How to Get a Stall at the La Choricera Central Market

Would you like to set up a stall at the La Choricera Central Market market, located at Segovia? To sell as a street vendor, you need a municipal street vending permit or license: this is issued by the town council, not the market itself, and typically requires that you be registered as a self-employed individual or a business, be in good standing with the tax authorities and Social Security, and have liability insurance that covers the stall.

La Choricera Central Market is held on Mondays, Tuesdays, Wednesdays, Thursdays, Fridays and Saturdays. The exact fee is set by the Segovia town council; please check it before submitting your application.

Applications are submitted to the town council, usually online or in person, and may be granted directly (if there are open stalls) or through a public call for stall applications with a waiting list when demand exceeds the number of available stalls. You can download the municipal ordinance on street vending from Segovia (check the town council’s official website to make sure it’s still in effect, in case it has been updated).

You can contact the Segovia town council at web@segovia.es.

  1. Contact the town council's commerce or markets department
  2. Gather the necessary documentation: registration as a self-employed individual or business, proof of being up to date with the tax authorities and Social Security, and liability insurance
  3. Submit the application for a street vending permit (through the online portal or at the registry office)
  4. Pay the applicable municipal fee, if required by the town council
  5. Pick up your authorization and bring it with you on market day
